When you grill meat, you risk forming HCA (heterocyclic amines), a carcinogen.   To minimize the risk of HCA formation you can do any of the following:

l.  Use water base for cooking of the meat:   steam or boil;

2.  Marinate with leaves of oregano, thyme. rosemary (basil) .  The powerful anti oxidants prevent
HCA from forming.

NEVER grill meat, unless you do this...

Most people aren't aware that when you cook meat (whether it's grilled, broiled, or seared) there are carcinogenic compounds that can form called HCA's (heterocyclic amines).  Now don't panic...you ingest various carcinogens all the time, even with some vegetables. You can always protect yourself with more antioxidants.

Please Note:  When you cook meat in a water base as opposed to grilling, broiling, or searing, you eliminate the harmful HCAs. So for example, meats cooked in a soup, or meats cooked in a crock pot will not have the problem of the carcinogenic HCAs and is a healthier way to cook meat.

But let's face it... grilled meat tastes awesome and there's no way I'm giving up my grass-fed steak from the grill, or my grass-fed burgers!

That's why it's important to know that there's a way you can use spices to both counteract, and also drastically reduce the carcinogens formed when you grill meat...

Here's the trick:

If you're going to grill meats, marinating meats for at least several hours beforehand in liquid mixtures that contain rosemary and other herbs/spices can dramatically help to reduce HCA's (heterocyclic amines), which are those carcinogenic compounds that can form when meats are grilled.  It appears that the highly potent antioxidants in these herbs prevent HCA formation.  So using rosemary, thyme, garlic, oregano and other spices in a meat marinade before grilling meats can drastically reduce any carcinogens that normally would form on grilled meat and give you a healthier meal, that's also very tasty!

The antioxidants in rosemary and thyme from a marinade were specifically cited in studies at being powerful inhibitors of HCA formation when grilling meats.  But it was also noted that other spices such as garlic, oregano, and others can help to prevent HCA formation as well, so I suggest using a variety, which tastes great anyway!

One more important point about grilling meat:

Remember that the more well-done a meat is cooked, the higher concentration of carcinogenic HCA's can form, so rare, medium-rare, or medium are healthier choices than well-done.  I've never understood why anybody would want to ruin a good steak by burning it to oblivion anyway.  But hey, if you're one of those folks that likes your steaks well-done, just remember that you're eating a lot more carcinogens than a steak that's cooked less, so make sure to load up on your antioxidants (spices, teas, berries, etc) to help combat those extra carcinogens.

Washing down your barbequed meal with a glass of unsweetened iced tea (rich in antioxidants) and also a good salad with lots of raw veggies can provide the antioxidants needed to counteract the effect of HCAs in your body from grilled meat.

By the way, even charring vegetables on the grill creates different carcinogens such as acrylamides, so don't think that the negative effect of charring only applies to meats.

Hey, we all love a great barbeque, so no need to give that up just because of HCAs or acrylamides, but at least now you know how to counteract the effects of these in your body to protect yourself, and also how to use spices to drastically reduce the formation of HCAs on grilled meat!

Forgot your glasses on the top of your head again? 

     As we age, we often have more "head-in-the-clouds" moments than we did when we were younger.  There are the simple explanations for these "senior moments."  You probably do have more on your plate, more to think about, more to worry about—and so naturally it is more difficult to remember where you parked the car or what you did with your keys. 

     But the scientific truth is, every time we can't remember someone's name or recall a familiar memory, our brain is actually signaling for help.  Innocent "brain slips" today often evolve into very serious memory loss conditions in the future.

     There are approximately 24 million people worldwide living with some form of dementia, a number that could grow to 84 million by the year 2040.  It is essential now, more than ever, to provide our brains with the necessary amounts of nutrients it needs to remain strong and vital throughout our entire lives; to sharpen our minds at every age and prevent bouts of forgetfulness; and to avoid being a part of those alarming statistics.

     Let's first understand the scientific explanation behind these bouts of forgetfulness.

Where Do Memories Live Anyway—and How Do Our Brains Retrieve Them?

Our memories aren't neatly stored in one area of the brain, but are scattered throughout, just waiting for a brain cell to come and collect them.  Our brain cells are constantly chattering with one another, sending signals to retrieve memories.

     As the brain ages, this cell-to-cell communication gradually deteriorates, and at a much younger age than anyone would have imagined!  By age 39 the communication rate between brain cells significantly begins to slow.  Although we may not experience any serious symptoms in our thirties and forties, age-related impairment is still occurring. 

     Autopsy results at Johns Hopkins and other medical centers confirm the gradual effects of aging on the brain:  The autopsies of subjects who had demonstrated no signs of forgetfulness or lack of focus while alive, still showed signs of memory-loss damage.

The Culprit?

We've all heard that free radicals can wreak havoc on our bodies; the cosmetics industry has made a fortune marketing products designed to combat the damaging effects of these molecules.  Free radicals are also one of the main culprits behind an aging brain.

     These highly reactive molecules are a normal byproduct of cell function.  What makes them dangerous is their extra electron, which doesn't want to be without a partner.  Free radicals steal electrons from healthy cells and tissues.  Left defenseless, these once healthy cells are no longer able to function properly and, if left depleted, eventually die.

     Fortunately, our bodies come with a built-in defense system of antioxidants, which cancel out free radical damage by donating extra electrons before free radicals can swipe electrons from our cells.  Unfortunately, this defense system is not enough.

     While our bodies are able to counteract the effects of free radicals produced within the body, they are unable to deal with the barrage of free radicals from outside the body, such as air pollution from industrial waste and cigarette smoke, lack of sleep, stress ... even too much sunlight!  Our antioxidant supply  is exhausted, sparking inflammation and aging in the body and the brain.

     Chronic, low-level inflammation is a contributing agent to 7 of the top 10 leading causes of mortality in the United States, including Alzheimer's disease.

     While we can prevent memory loss and its consequences—including poor concentration, confusion and a tired mind—by feeding our brain the necessary antioxidants it needs to neutralize free radicals, these antioxidants are not readily available in the foods we eat or in the supplements we take.

     Traditional antioxidants, such as vitamins C and E, while effective at eradicating free radicals in the body, do nothing to battle the free radicals that threaten our brains.  These typical antioxidants cannot get past the blood brain barrier, a protective wall that shields the brain from harmful toxins.  Regrettably, the blood brain barrier is so effective that it keeps the beneficial antioxidants out as well.

     There is, however, a newly reported antioxidant that has demonstrated an exceptional capacity at infiltrating the blood brain barrier and protecting against inflammation and memory loss.

Key Nutrient for Protection Against Brain Inflammation and Memory Loss

Researchers from Tohuku University in Japan studied 30 healthy men and women, ages 50 to 69 years, to measure the effects of a key omega-3 fatty acid derived from marine algae, on overall cognitive functioning.  The results, published in the British Journal of Nutrition, showed that this key nutrient not only reached the brain at a far greater rate than other antioxidants, but also reduced the levels of free radical compounds proven to cause dementia.

Are Anti Oxidants better than Chemotherapy in treating cancer

There are recent feeds from Newsmax Health suggesting that anti oxidants do a better job of treating cancer than chemotherapy.
We all know that success rate in chemo is 3% or lower and expensive.  The cancer patient, who started with weak immunity system
in the first place, gets weakened by the chemo treatment which is non selective:  it zaps both healthy and cancerous cells alike.

Thus the cancer patient now has two enemies:   the cancer cells eating his nutrition, and the chemo therapy.
