It's turning out to be kind of a bad month for poultry.

Yesterday, I told you about the USDA's efforts to put safety inspections in the hands of the factories themselves and to drastically speed up the process--a decidedly dangerous move.

And today I bring you news illustrating just why we can't start slacking on food safety--or let the industry take control of inspections.

Researchers at Johns Hopkins found something disturbing in their recent tests of feather meal. Feather meal, by the way, is a byproduct made of ground-up poultry feathers that's commonly added to feed for chickens, pigs, cows, and fish.

So, feather meal is pretty disturbing to begin with. But, yes, they found something MORE disturbing--a wide variety of drug residues, including antibiotics that were banned in poultry production back in 2005.

Fluoroquinolones (a class of antibiotics that includes cipro) were banned because their use in poultry had been linked to increasing antibiotic resistance.

But lo and behold, seven years later it looks like the industry is still dosing these animals with the drugs, completely disregarding the ban and putting our health at risk (the drug was specifically linked to resistance among Campylobacter bacteria--a leading culprit in foodborne illness).

The research team was actually "shocked" at the variety of drugs they detected in the feather meal--59 pharmaceuticals and personal care products, and up to 10 different antibiotics. Even drugs that aren't normally associated with producing poultry were found. These included the active ingredients in Benadryl, Prozac, and Tylenol.

Needless to say, frustrations are mounting with the FDA's amazing inaction when it comes to enforcing their bans on substances that harm public health.

Of course, the National Chicken Council sprang to action with a weak attempt to downplay the results, pointing out that the study looked at feathers and not the meat of the chickens being produced. But come on, if the chickens are eating that feather meal, and we're eating the chickens... well, call me crazy, but it seems like a big deal to me.

They also pointed out that all chicken produced in the United States is inspected by the USDA. Which, after yesterday's e-Tip, isn't at all comforting.

Congresswoman Louise Slaughter (ironic name, I know) of New York has asked the FDA to respond in 30 days with how they plan to investigate this issue and provide details of current oversight processes.

I'm not holding my breath for an encouraging response, and I'm more grateful than usual that I choose to get my poultry and other meats from a small organic farm that's refreshingly transparent about their practices. The mainstream poultry industry can keep their dosed-up chickens.

Fatty acid fix

Q: What is CRP? My cousin told me he has an elevated level. Is this something that can be lowered naturally?

Dr. Wright: CRP stands for C-reactive protein. It is a protein that circulates in the blood, especially when there's inflammation in the body, including inflammation of the coronary arteries. Doctors are finding that it's a far more accurate indicator of a future problem with heart disease than cholesterol levels alone.

The simplest way to lower the CRP level is to reduce inflammation in the body. The best way to accomplish this is to pay close attention to the ratio of essential fatty acids in the diet.

Here's a simple rule to remember: Omega-6 fatty acids are pro-inflammatory and omega-3 fatty acids are anti-inflammatory. So the fatty acid ratio should be more 3s and less 6s. Unfortunately, the standard diet is much heavier on the omega-6s.

But you can reverse that with a few simple changes. Foods containing hydrogenated and partially hydrogenated vegetable oils are the biggest offenders for loading up on omega-6s. Staying away from potato chips, corn chips, crackers, and cookies are a good start--but when you start reading the labels at the grocery store, you might find that even things you considered "healthy" also contain it. Also, most nut oils, like sunflower, peanut, and almond, are high in omega-6s. Olive oil is the best choice.

Fish oil is the best way to increase your intake of omega-3 essential fatty acids. I recommend 1 tablespoon of cod liver oil and 1,500 milligrams of DHA daily. And remember, whenever you take any type of fatty acid, you need to take vitamin E as well (400 IU of vitamin E as mixed tocopherols). Vitamin E helps keep the fatty acids from breaking down too rapidly in the body.

Also worth noting, sometimes CRP can be elevated with other types of infection such as chlamydia and helicobacteria. These can also inflame blood vessels. Make sure your doctor checks all possibilities thoroughly.
