This recipe not only satisfied my cravings for the sugary good stuff, it is also tops out in the health department. Flax Seed And Nut Granola (aka Diabetic Cereal)
Ingredients:
- 1 cup flax seeds
- 1 cup sunflower or pumpkin seeds (I use pumpkin seeds)
- 1 cup unsweetened shredded coconut
- 1 cup chopped pecans
- 1 cup chopped walnuts
- 1 cup sliced almonds
- 3 ounces virgin coconut oil
- 3 teaspoons cinnamon
- 2 tablespoons vanilla extract (or, you can use maple extract)
- 2 tablespoons of stevia (I use Slimtevia)
Directions:
- In a large roasting pan, mix everything together.
- Toast in the oven at 325 degrees for about 20 minutes, stirring every 5 or 10 minutes.
- Keep an eye on this because it can burn easily, esp if you chop the nuts too fine.
- Enjoy in a bowl with almond milk or as a healthy snack option for the road.
Carbs
1 cup - 9.5 carbs
3/4 cup - 7.1 carbs
1/2 cup - 4.7 carbs
If you use almond milk add 8 carbs per 8 oz. Or unsweetened almond milk add 2 carbs per 8oz.
